1) You'll need to start off with 6 to 8 squirrels, or more if you have them, as there is not much meat on a squirrel and we want a good amount in our soup since it is squirrel soup and not vegetable soup! After ensuring that the they have each been cleaned, I like to soak them in salt water over night.
2) Take a large pot, fill it full of water and bring the water to a rolling boil. Drop a couple of whole squirrels in at a time and let them boil for about 10-15 minutes or until they are cooked through. Once they are ready, take from from the pot and set them in a strainer to cool and continue until all the squirrels have been cooked.
3) Take the squirrels and pick all the meat off of each of them, being careful to discard any lead shot and small bones you may find. Place all of this meat into a separate bowl and season it liberally with seasoned salt, pepper, garlic powder and some Italian seasoning. I also like to throw some Worcestershire sauce in and, if you have a chicken bouillon cube laying around, dissolve it in some hot water and pour into the bowl. Cover this and let it marinade overnight in the fridge.
The next morning you'll need:
Carrots
Potatoes
1 onion
1 green pepper
1 can of diced tomatoes
1) Cut the carrots and potatoes into bite-sized pieces as you would for any soup or stew. The size of your crock pot will determine how many you can add so just use your best judgement. The more the merrier I always say!
2) Dice the onion and pepper.
3) Turn your crock pot on to low and place the meat that has been marinading all night in it along with the potatoes and carrots that you just chopped as well as the diced pepper and onion. Follow that by pouring the can of diced tomatoes in.
4) Once everything is in you'll want to cover the ingredients with water and add some additional seasoning of your choosing; I like to add some additional garlic powder and Italian seasoning personally.
Now just sit back and let this cook down for 6 to 8 hours on low, the longer the better, and then enjoy a big bowl of it. Note: It is great served with some warm biscuits!
